Honey & Thyme Crispy Chicken Thighs with Caramelized Onions and Roasted Garlic Mashed Potatoes
This dish may look hard to make…but would you believe me that all you need is a sheet pan and pot?! These crispy, flavor packed chicken thighs are perfect for dinner parties and will impress any guest. The bone in chicken thighs give so much flavor to the dish and the caramelized onions with the mashed potatoes make it so delicious. Impress your guests with these chicken thighs, without paying too much for an expensive cut of meat! Let’s get fancy!
Ingredients
6-8 Bone in chicken thighs (you can get boneless…but it wont be the same!)
1 tbsp canola oil
3 tbsp of reserved drippings from chicken thighs
~3-4 tbsp of fresh thyme (if you don’t have fresh, use less dried thyme) and the more for serving
2 tbsp Honey
1 head of garlic (some will be for the chicken, some will be for the potatoes)
2 medium yellow onions
(optional) 1 tbsp of ‘Better than Bouillon’ beef stock
1/4 cup of dry white wine, like a chardonnay or savigon blanc
5-6 medium russet potatoes, or whatever kind of potatoes you want to use for mashed potatoes
1/2 cup sour cream
4oz cream cheese
1 stick of butter
Directions
First, get out a rimmed sheet pan. Drizzle some olive oil on the bottom of the pan, just enough the coat the bottom so things don’t stick.
Prepare the thyme. Remove the leaves from the stems and collect about 3 tbsp of thyme.
Cut the onions. Slice them at about a 1/4 of an inch thick and scatter them on the rimmed sheet.
Prepare the garlic. Remove all the individual cloves from the bulb, but leave the skins on! From the cloves, take 3 cloves and remove the skins and finely chop (these are for the chicken) Take remaining cloves and put to the side of the rimmed sheet. I have provided a picture to how I set this up!
Prepare the chicken. To get exxttrraa crispy chicken, you need to leave the skin on and make sure the chicken doesn’t have any extra water on them! Take a paper towel and blot the chicken to remove water. Place the chicken on top of the onions. Drizzle the oilve oil, thyme (save about 1 tbsp though!), garlic, and salt and pepper over the chicken/onions. Mix together till evenly combined. After combined, top of the chicken portions with a little more thyme so they are evenly covered.
